Memorial Day weekend is only a few days away and I don’t know about you but I plan on spending lots of time in the yard, on the beach and cooking with friends and you better believe that this gluten free berry chia cobbler recipe is on the menu!

This gluten free berry cobbler is super easy to make and I LOVE the addition of chia seeds to the berry mix because not only does it add protein and good omegas to the dish but it also helps bind the berries together without having to use a ton of sugar.

Gluten Free Berry Chia Cobbler

Gluten Free Berry Chia Cobbler

Serves 6 – 8. Prep time: 15 minutes, Cook time: 30 minutes

Fillling
3 cups organic berries
Zest and Juice of 1 orange or lemon
1/4 cup chia seeds
2 tablespoons coconut sugar or honey

Topping
1 cup gluten free oats
1/2 cup all-purpose gluten free flour or coconut flour
2 tablespoons coconut sugar
1 heaping teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/4 cup coconut oil
coconut chips or flakes

1. Pre-heat the oven to 350º. Place the fruit in a bowl and mix with the zest and juice of the orange or lemon, chia seeds and coconut sugar or honey. Set aside

2. In another bowl, mix all of the dry ingredients together and then cut in the coconut oil with a pastry cutter or a fork until the mix resembles pea size crumbs.

3. Grease a 9×12 pan or 6 ramekins with coconut oil. Spoon berry mixture into pan or ramekins and top with crisp topping and sprinkle with coconut. Bake for 30 minutes.
